Coconut Spice - The Smell of a Coconut Mojito on a Rainy Day
Coconut Spice

Coconut Spice - A coconut spice mojito rainy day!

So last week I just celebrated my birthday with family and friends. It was an unusually rainy and humid July day in Las Vegas. My trees and plants were all soaked and the air smelled like the Mandalay Bay Hotel or the Mirage Hotel the smell of Coconut.  Every year my husband always selects a featured drink to serve my party. Coincidentally, this year's drink was the coconut mojito. I thought it was perfect for a hot and humid summer day in Vegas. The smell of mint, lime, and coconut spice in a glass!

The freshness of the mint grown in our backyard (I know, off the grid), the coconut rum, and the fresh limes made for a deliciously fragrant drink that we indulged in late into the night. As we and our guests sat out in the backyard, sipping on our mojitos and enjoying the rain, we reminisced over vacations in the tropics, in the Caribbean’s and other beautiful islands around the world, it was a great way to celebrate.
